Helene An, Master Chef

Helene An is Master Chef of AN Restaurant Group and the celebrated Crustacean Beverly Hills restaurant. Growing up in Vietnam with an aristocratic background and later marrying a pilot of an opulent Vietnamese family, Helene devoted most of her time entertaining international dignitaries. She employed three chefs—French, Chinese, and Vietnamese to work in her kitchen. With the Fall of Saigon in 1975, she fled with her family and arrived penniless in San Francisco where with mother-in-law, Diana An, she turned a 20 seat Italian deli into San Francisco’s first Vietnamese restaurant. Thanh Long became known as the #1 purveyor of Dungeness Crab on the West Coast.

In 1991, encouraged by Thanh Long’s success, Helene and her daughters opened Crustacean restaurant, pioneering the fusion concept to the culinary world. Michael Bauer, San Francisco Chronicle’s restaurant critic, celebrated Helene by naming her the Mother of Fusion Cuisine. In 1997, Crustacean in Beverly Hills opened and was named one of America’s Ten Best New Restaurants by Esquire Magazine. With its “walk on water” award-winning architectural design concept and Helene’s Secret Kitchen dishes—the An’s Dungeness Roasted Crab, Colossal Tiger Prawns and An’s Garlic Noodles—Crustacean quickly became a celebrity hot spot, attracting stars such as Jackie Chan, Leonardo Dicaprio, Catherine Zeta Jones, Jessica Simpson, Cameron Diaz, Will Smith.

This year marks Helene’s and her family’s 35th anniversary in business, and the 10th anniversary since Crustacean, Beverly Hills opened. In addition, they have just launched their offsite catering operation so fans can get a bit of Crustacean at home. And coming shortly, will be announcements of AN’s new restaurant openings across the States.
